It's officially the first day of Spring! Hooray - and here in Ashford, Kent, it's a beautiful sunny day. I've had this woodland cake forming in my mind for a while now and it was lovely this week to finally have the opportunity to make it. Two layers of moist lemon drizzle cake, filled and coated with lemon buttercream and covered then decorated with free-standing sugar paste trees, mushrooms and flowers. The cake is 100% edible, including all of the decorations - I'm not a fan of unnecessary bits of wire, ribbon or plastic on cakes. With much larger, more complex structures, non edible supports and components are absolutely necessary, but there are so many ways to avoid non-edible additions when it comes to cake decoration - and I'm enjoying exploring this. I love the idea that you can just pick up a tree and tuck in, with no nasty surprises!
