Baking challenge #19: Mary Berry's muesli cookies

I am really into muesli right now, so, flicking through Mary Berry's Baking Bible for a new recipe to try, this seemed like the obvious choice. Mary Berry's muesli cookies are a great bake if you're short on time, as they are super easy to prepare and only require 10-15 minutes baking. Thankfully, I no longer commute, but if I did, these would certainly go down well as a second-breakfast train snack.

I found it tricky to make them look pretty, I used muesli with huge oats and big wheat flakes, which I think didn't help. The recipe directs to proportion the mixture in teaspoon dollops on the baking tray, I found that flattening these out with the back of a spoon before baking resulted in a rounder, more aesthetic cookie. When I make these again, I'll either reduce the sugar content or use un-sweetened muesli, as they were just a little too sugary for my palette.

A great basic cookie recipe, a lovely second breakfast mid-morning with a cup of tea.
