Recipe: Vanilla fudge cupcakes

Personalised vanilla fudge cupcakes
I made these vanilla fudge cupcakes last week for some friends. The sponge is flavoured with vanilla and studded with fudge, topped with vanilla buttercream and fudge pieces. I added a couple of icing buttons and a personalised icing heart to each cupcake (I'm prepping a separate tutorial for these!). This is the recipe for the vanilla fudge cupcakes with vanilla buttercream frosting - it makes six large (muffin sized) cupcakes. Contrary to your expectations, these cupcakes strike an aesthetic balance - they are flavoursome without being sickly!

To make six vanilla fudge cupcakes:
120g self raising flour
100g caster sugar
1 tsp baking powder
40g butter
120ml milk
1 egg
1/2 tsp vanilla extract
90g fudge pieces

For the icing:
80g butter
250g icing sugar
1/2 tsp vanilla extract
25ml milk
1/2 tsp of food colouring gel (I used red to create a deep pink icing)
15g chopped fudge pieces

To make the cakes:
Pre-heat the oven to 170C (fan). Prepare a muffin tin with six paper cases.

Measure all of the cake ingredients (except for the fudge pieces) into a bowl and use an electric food mixer to combine. Stir through the fudge pieces.

Spoon the mixture into the paper cases until they are 3/4 full. Bake for 25 minutes, until the tops are just turning golden and the sponge springs back when gently pressed down.

To make the buttercream icing and decorate:
Combine the icing sugar, butter, vanilla extract, milk and food colouring into a smooth icing. Spoon into a piping bag with a star nozzle and top each cupcake with a small swirl of icing. Sprinkle fudge pieces on top.

  2. hey ! this recipe tastes amazing! however I followed it to the t and all fudge inside the cakes dropped to the bottoms when cooled and I was unable to get any cakes out of their cases because all all became stuck. have you got any suggestions to prevent this happening?

    1. Hi - thanks for your comment and I'm pleased you enjoyed the cupcakes! It sounds like maybe your fudge pieces were individually a little heavier than mine - you could try chopping them up a little more finely to help prevent them sinking. Alternatively, if the sponge mixture seems too liquid, you could reduce the amount of milk a little - maybe by 10ml - 20ml and see if this makes a difference? Good luck!
