Recipe: Chocolate orange cupcakes

Chocolate orange cupcakes, as baked by EJ
These mini cupcakes have a chocolate orange sponge topped with marbled chocolate and orange buttercream, with a chocolate orange segment balanced on top as a finishing touch.

To make the marbled chocolate orange icing, you first need to prepare orange buttercream and chocolate orange buttercream.

This recipe makes 18 mini cupcakes.
To make chocolate orange mini cupcakes, you will need....

18 fairy cake cases

110g butter
110g caster sugar
110g self raising flour
2 eggs
grated zest of half an orange
2tbsp orange juice
100g dark chocolate (melted in a bain marie)

For the orange buttercream icing:
150g butter
200g icing sugar
2tbsp orange juice

For the chocolate orange buttercream icing:
100g butter
150g icing sugar
2tsp cocoa powder
1.5tbsp orange juice

To finish:
18 chocolate orange segments

Pre-heat the oven to 180C

Arrange 18 fairy cake cases in a baking tin.

Combine all of the cake ingredients together in a bowl and mix with an electric mixer until combined and fluffy.

Spoon the mixture into the fairy cake cases, filling each until approximately 3/4 full

Bake on the middle shelf for 10-15 minutes, until golden and cooked through, remove the cakes from the tin and place on a wire rack to cool.

To make the marble icing...
To make the orange and chocolate orange buttercreams, mix the respective ingredients together in two separate bowls.

Prepare an icing bag with a star nozzle. carefully spoon one tablespoon full of the orange icing into the bag, positioning it over to one side. Then spoon one tablespoon full of the chocolate orange icing in alongside the orange icing, continue this way until the bag is 3/4 full. Before icing the cakes, squeeze the icing bag until the icing comes out marbled, then pipe a swirl of the marbled icing on top of each cake.

Top each cake with a chocolate orange segment to finish.
