Royal icing is so far a little (or long way) out of my repertoire, but anyone can make a refrigerator cake, right? So Bank Holiday Monday afternoon I set myself on a mission to make some posh mini refrigerator cakes, and around one and a half hours later these little cuties were ready to munch.
The finished refrigerator cakes - topped with pistachio & cranberries
Stage 1- melted white chocolate, then chilled
Stage 2 - the yummy centres (chopped nuts and dried berries)
Stage 3- melted dark chocolate with golden syrup, crushed rich tea biscuits and chopped nuts & berries
Stage 4- thoroughly chilled & turned out
